Memorial Day Food!

Honestly one of my favorite parts of camping is the planning and the prep that goes in before hand.  Maybe its kind of how like Christmas Eve is the best (right Stu?) its all the anticipation that leads up to the big day.  For this trip the planning consisted mainly of food!

Here is the menu that we prepared for the group:
Lunch was pretty casual with make you own quesadillas while the tents were set up.

Dinner had a seafood theme to it for our first night:

Bacon wrapped shrimp

a HUGE king salmon

Super yummy quinoa asparagus avocado salad (love my collapsible bowl!)

Rob also grilled a few whole fish (think this was an anchovy)

Of course smores

Then our Dutch oven cobbler rounded out the night!


We started off the next day with homemade brioche French toast (it was worth making the bread for!)


For lunch we had one of my favorites - Pie Iron Pizzas!


While others went hiking we decorated the campsite for Marissa's birthday!!


For dinner we had a dutch oven lasagna, grilled ceaser salad and dutch oven Birthday CAKE!



Sunday night it started to pour down rain, as such breakfast was canceled for Monday morning!  Sorry guys... next time!
